Butternut Squash Bouillon with Black Sesame Seeds & Fresh Cilantro

The plain light beige beautiful vegetable hides a bright yellow-orange hue inside is packed with beta-carotene, an antioxidant pigment that turns into vitamin A in your body.

The cilantro or leaf-coriander as it is commonly called in Asia, contains a great amount of antioxidant in its deep green leaves, as well as essential oils, vitamins and minerals, which is excellent for regulating the heart rate. This versatile herb is also known for helping remove toxic heavy metals from the body.

The black sesame seeds are small but very powerful for many health benefits, including anti-aging properties. They are rich in magnesium, which helps regulate the blood pressure. The abundant calcium and zinc content helps strengthen the bones, preventing osteoporosis.


1 small butternut squash, 1 small onion, garlic, fresh turmeric, 1 tbsp olive oil, sea salt, ground pepper and a large bouquet of fresh cilantro.


In a pan over medium heat, sauté large pieces of butternut squash, onion, garlic and fresh turmeric, salt and pepper. Cover with water and let it boil for 5 to 10’ then reduce the heat to low till the bouillon is ready and the squash soft.
Serve in a bowl and cut cilantro leaves to cover the bouillon, sprinkle with black sesame.


Note: Be creative and add those nutrients-rich seed in your porridge, cereals, rice, noodles, salads, soups or any other dish.
